Tofu and Quinoa Medley

The perfect mix of textures and flavors!

This meal consists of:

-Extra Firm Tofu

-Organic Quinoa medley

-Tomatoes

-Avocados

-Chick peas

-Sweet potato noodles

*I cooked the tofu and tomatoes in a pan with olive oil until tofu is golden brown

*I cooked the sweet potato noodles and chick peas together in a pan with olive oil – at 350 degrees until crispy (occasionally stirring in pan)

*For seasonings, I used garlic powder, basil, lemon, and pepper
