Hands-down, my favorite meals consist of cauliflower rice as a base. I may or may not eat the whole bag in one meal at times, oops. But I’m still guilt-free because a bag is less than 100 calories!
Cauliflower rice is amazing because it is has the texture and fulfillment of rice, but…it’s cauliflower! You can find it in the produce section with the vegetable medley bags and/or in the frozen vegetable section.
Here I used cauliflower rice as my base with:
-Stir-fry vegetables (cooked with olive oil, fresh lemon juice, and pepper)
-Ground chicken cooked in pan (plain and cooked to be crispy, YUM)
-Baked sweet potato chips (with olive oil)
-A DELICIOUS mashed broccoli and cauliflower as a sauce/mix-in!
*To make the mashed broccoli and cauliflower:
-Steam broccoli and cauliflower, add a bit of a liquid source (I use almond milk), and blend..so delicious!
Can be used as a dip as well! I dipped sweet potatoes in it and snacked as I prepared the rest of my meal – so yummy! 🙂
